Valves and their Proporties

Could someone give me a run through on some valves and there tonal proporties, i have a mesa studio with five( 12ax7s )and a peavey classic 60/60 with 4(6l6s and 12ax7s) i think, anyway thinking of changing the valves.
I play modern metal so high gain all the way.
