I have a MK4 with older tubes and an F100 with new ones. They both run the a quartet 6L6s and 12AX7s - although the MK4 has 5 pre amp valves. Does anyone know if I'll be OK to swap the valves around for my next few gigs while I await delivery of my new set? :?:

swap away dude.....boogie tubes can be used in any amp that uses the same type of tubes...especially another boogie.

How easy is it to swap from 6L6 to EL34? Is it literally just fit 'em and flip the bias switch? (I have a mark V btw!)

I can only vouch for the MK 4 Sted (no experience of the MK5)but I think you can put a matched pair of EL34s in the two outside positions. I thought Mesas were all fixed bias - so I'm not totally sure about that one! Better be safe than sorry and post a question in the 'tubes' section - I'm sure someone with more knowledge can guide you in the right direction.
