Is it possible to turn a C+ 100/60 watter into a simul class version ?

Yes, but as far as I remember the general consensus is that it's more economically sensible to buy a factory Simul model and sell your current one.
 
True, but Simul C+'s don't show up for sale very often. It's usually the 60/100's that do.

On another note, I read somewhere that someone sent their IIC in for the + upgrade, and they had it converted from Simul to 60/100. To each his own, I guess...

If you are looking for the fully loaded amps , and i want a wide head its very usefull to know that it can be converted , because those amps are almost impossible to find and when you do you can be garented that you are not the only one bidding.

Unfortunaly those ebay 100/60 amps many times end up costing the same as the simul
