Tried experimenting with midi switches? Then you could save some configurations on it and link them to your own pedal board. These are semi-simple to make if you are a DIY type of guy. There are schematics all over the internet for these. (yes, I'm trying to make one for myself)

It all depends on your taste. The closer the pickup are to the strings the more signal you're going to get but the magnets are going to dampen the string vibration a bit. Further away the strings will vibrate more and you'll get more sustain, but less signal. Just find a good balance that works...
