The manual very briefly describes this port on the Roadster. My question is what does it do? Could I hook up a channel to my MacBook Garageband to record tracks? Is that the purpose of the Midi thing on the Roadster? I am not too up to date on Midi stuff. PLEASE, take the time to help me!

Its for your footswitch. If you have an external switching system like my RJM Rg-16, they sell cable that work with the footswitch jack but i wouldnt confuse it with other midi type gear, its not the same.
