A few questions, for the experts: :)

1) Is it easy? I'm fairly handy with a soldering iron - I've done plenty of work on my guitars over the years, and I installed a filter choke in my old Yamaha T-100 - but I'm not an amp tech. Is this something I can probably do without frying the amp or myself?

2) The "pentode-triode" switch on Mark IVs and Vs: could something similar be installed here? Would that drive the complexity level through the roof?

It's not a complicated change to the circuit, but if you aren't solidly experienced and confident in those skills, leave it for a professional. You can even create a switchable mode option to trade between triode and pentode, like the MkIV does. But again, it takes proficiency in electronics. In essence, you're bringing your MkIII up to a green stripe. There are green stripe schematics in the wild to use as reference.
