So I sold off the top 2 EVM-12L's in my halfback 4x12 cab and was wondering if I could re-wire it and use it as a 2x12 cab for now. It was originally wired in series parallel with four 8 ohm speakers making a total load of 8 ohms.
If I do use it as a 2x12 with the remaining two 8 ohm speakers, it would make the total load 4 ohms correct? Is there a way to wire it to make it 8 ohms total?

Yes it could but it could also end up being 16 ohms

No.
Two 8 ohm speakers:
Wired in parallel = 4 ohms
Wire in Series = 16 ohms

There is no way to make them 8ohms

Here's a decent webpage for different schemes of wiring diagrams:

http://minornotes.com/speakerdiagrams.html

There are many more just do a google search for "series parallel speaker wiring diagram"
