Running two cabs off of one head won't give you a stereo rig (except in the case of an actual stereo head), it'll give you a slightly fuller (but still mono) sound. You would need a second amp to run the second cab in order to have stereo capabilities, and also a time-based effect such as a chorus, delay, or such to divide the signal into stereo.
