It just seems to lack the bite i have seen from other videos on line

What guitar are you using and which pickups? I had a similar experience when I got mine, until I tried another guitar and it sounded very different. With my guitar it was missing punch and tightness on the low E. With the guitar I borrowed it was like everything I wanted out of the amp, even though it has the same pickups as mine.

*Edit after watching your video, I would also lower the bass knob to 9 o'clock or less, and increase the treble a bit
 
You can't EQ a Mark like you do a Recto where you start all the knobs at noon- it just doesn't sound good there. Better to start with all the knobs at zero, then turn one at a time starting with the treble. Set with your ears not your eyes. Better yet, get a looper pedal with a riff in it so you can really twist knobs & focus on the tone like I did. (Although in this demo I did start them from noon at first, but then from zero later...) Then when you have the tone stack sounding as good as possible, flip on the GEQ to really sculpt it to your sound.

FWIW I have 3 guitars with the same pickups, and the volume / gain is vastly different between them.

It's going to lack bite with those settings.

There are some great settings in the JP2C setting thread and some great settings and ideas people are offering right here on this thread. You were close with your first pic you posted of your settings. I'd listen to the advise these guys are giving you. In JP's first demo video from mesa he shows you exactly how to get a great sound, in detail. Then plays it, so you know exactly how it supposed to sound.

Make sure you are watching the JP videos where he plays without effects - there are 3 of them I believe where he plays the amp dry, then puts the effects on. It's really hard to match settings when JP's pixie dust is running into the effects loop.
 
I looked at your settings on the picture you provided. Your bass is fine for CH2 and CH3, but your volume level is very low. To get that punch, kick, edge, or drive from this amp you may need to turn it up a bit more. However, what speaker cabinet are you using, brand and type of speaker in the cab? That may make a huge difference how this amp performs. All of the Mesa Videos of the JP-2C used Mesa 2x12 or 412 cabinets loaded with V30 speakers imported from England. The Chinese version of these speakers sound similar but not the same. No wonder why Mesa has not opted for the cheaper alternative.

I was unable to comment on your post but now I can as I have the JP-2C.
My experience with different cab types and speakers (for 1x12 I used the speaker in the Mark V combo, for 2x12 I used the speakers in my RA100 combo, not same as the 2x12 recto cabs). First off, I dialed in one of the sample settings that was in the manual but had the volume down and was not impressed. Of course I was trying out different speaker combinations to determine what to get for this amp. I never thought I would believe this but after experiencing the amp though an EVM12L Black Label speaker it did not impress me one bit. I had loaded the EV in my Mark V the night before the amp was due to arrive. Mark V sounds great with the EV but only when you drive it hard. I Prefer the Celestion Creame 90W Alnico in my Mark V combo, so after putting it back in, tried it thought the JP-2C at 60W. Same result. One to the next, Celestion Cream Back G12H75 as I have a pair of those in a Royal Atlantic combo. Much better than the 1x12 option. Pushed the volume up some more and was almost blown away. Next was an old OS Recto 412 with the same Creambacks but 8 ohm versions. Better but not as good as the Roadster. What came last was the best, OS Recto loaded with the V30. That blew my mind. The JP-2C seems to work well with the V30 speaker in the Oversized Recto Cabinet. Tight, refined and authoritative. Add more gain and it became explosive. I may assume that this amp is tuned to respond well with the V30 speaker. Perfect blend of frequencies and tone that I was amazed how well this amp sounds with the V30. If you are concerned about volume, you can opt for a 2x12 cab. I am considering the Vertical Recto slant front 2x12. I love the full sized 412 but would prefer a reduced output without having to drive the volume down.
