Need to decide if I want to go with a head on the 5:25 plus paired with a Lonestar 19 cab - or the combo and possibly a Theil cab underneath. Any arguments for one over the other??
 
In my eyes, you are asking two questions:
"Head vs Combo" and is "1x12" enough"?

1) If I had to decide between a Head an a Combo, i´d prefer the Head.
Its easier to carry around and you are way more flexible in changing Cabs.

2) One C-90 Speaker in a open back Cab is a nice companion for the Express 5:25 - you get this in both combinations (Head with Cab or Combo).
Adding a Thiele Cab should add a lot more Punch and low end to that.
A combination of two Cabs with one having an open Back and the other being closed Back is a great.
 
I don't need a lot - not looking for a stack just more tonal expression and room for options. The Theil cab under the combo is way pricey. It's cheaper to go head and cab but that still leaves me with only one speaker option unless I plug into another rig. It seems to me the speaker in the combo is pretty good - going to a head with a Lonestar 19 puts me at a c90 as opposed to a v30. ???
 
Oh, yes, sure - you are right!
The 5:25 Combo comes with a V30 - excuse me!

To my ears, the C-90 is a little more balanced sounding, compared to the V30.
If you want both: The Head with a 2x12 Roadking Cab should be about the same money than a Combo plus a Thiele Cab.

Saw an ad on CL this morning for a "Custom Mesa Boogie Style 1x12 Thiele cab. New w Eminence Delta PRO 12A - $225". The dimensions would certainly work for the express plus head but not sure about the speaker...My last experience with a closed back 1X12 on that TA-15 gave me ptsd. LOL
 
My vote is for two speakers in whatever pairing you like. So the head with th RK cab, closed back V30 and open MC90 or two 1x12 cabs say open back compact with a Thiele as well. Even a V 2x12 recto cab. To my ears it sounds way better. I run a 1x12 open and a Thiele cab below a 5-25 plus head and it sounds AWESOME. The 5-25 plus can power a 4x12 pretty well to!
Try as many combinations as you can.
