I found a Dual Rectifier for sale that still has the original STR-420 tubes. It's serial number is in the high 12,000s (R-0129xx). Is there any way to tell what year this particular amp was made? Once the amps hit Rev. G, did the schematics stay the same until the 3 channel DRs arrived?

Yes they stayed the same until the 3 Channel came out. The amp in question is probably a late 90's model.
 
Are DRs like old Marshall JMPs and JCM 800s, where no two models sounded the same? For example, buying one with a serial number in the 5000s, vs one in the 15,000s, doesn't make a difference. Sorry if this is a stupid question. Let me know if I'm beating a dead horse.
