I know in such cables/adapters a sort of european standard wants XLR connector's pin 1 (chassis ground/cable shield) and 3 (inverted polarity/cold) to TS (mono jack) ground, while pin 2 (normal polarity/hot) to TS tip. How does this method affect the way in which mixing console/microphone/active loudspeaker's phase inverters work? Are there any changes in the gain of the signal? Is it always safe to use such cables/adapters (i.e. I know it isn't when applying phantom power)? thanks
 
you will also not be able to do as long cable runs without singal loss/interference since it will be basically a balanced connection running as unbalanced.

to get the benefit of a balanced connection you must use a balanced cable and both devices it connecting must be balanced in/out.
