i've noticed that some pickups have Allen key bolts or screws on them and i've been wondering what would happend if they are either screwed in or out in terms of sound or anything really.

Raising or lowering the pole pieces has a slight effect on the volume of individual strings. It's more effective to raise or lower the overall height of the pickup at the sides.
