The practice space I rehearse at has a jcm cabinet either 8 ohm stereo, 4 or 16 ohm mono, I am assuming I should just go 4 ohm out, but does it matter which jack I use on the head?
 
Use the 4 ohm output on your amp, and run the cab at 4 ohms (mono).

Your other option would be to use the 8 ohm output on your amp and use ONE SIDE of the cab at 8 ohms. But then you'd only be using two of the four available speakers.

I just bought the 100w Zmatcher because my Roadster only has one 8 ohm output and I have two Marshall 16 ohm cabinets. There are no directions for the thing but I connect the single 8 ohm jack of the Roadster to the Z matcher set at 8 Ohms, and the two 16 ohm cabinets connected to the Z matcher set at 16 Ohms. I assume this is correct, it sounds great. My stupid question though is this exactly the same as if there were two 8 ohm jacks on the amp connected to two 16 ohm cabinets volume-wise and everything?

No, that's wrong. You need to have the output of the Z-Matcher set to *8* ohms because two 16-ohm cabinets makes a total load of 8 ohms. Don't worry, you won't have fried anything, but you really don't need the Z-Matcher to do that as Dom said, you just need a y-cable - in this set-up the Z-Matcher is just acting as a splitter box.

The Z-Matcher is still useful if you want to run just *one* of your Marshall cabs though.
 
Thanks guys, just ordered a parrallel y speaker cable and sold the Z matcher once out I don't really need it.
