So I've still got the combo shell my Mark IV came in, despite switching over to a rackmount kit.

The main reason for moving away from the combo was I hated the EVM speaker in it.

I'm a big fan of the Celestion V30, however with it being 60 watts I don't think that's a good pairing for the 85 watt (is this correct?) MarkIV.

Can any suggest a speaker I could put in the Mark IV that I could still crank up the volume to 4 or so and is tonally similar to a V30?

Try an MS-12. It's rated at 150w and is smoother than the EVM. I think it's a perfect speaker for Mark series combos.
 
I think the Eminence Governor may be close - it's 75 watts.
I've got a Texas Heat (150 watts) in my Mark III currently and I like it a lot.
It breaks up earlier, while an EV hardly breaks up at all unless you're really cranking it.
It has more low mids, and a bit less bass overall.
If you like the V-30, try a 2 x 12. That should handle the juice.
