2x12 and speaker question with 2:100 amp

So I got a 2:100 amp and a 2x12. I got (2) Celestion T12 100's which are 8ohms.

What should I do with the speaker wiring?

1. Wire the 2 8ohm speakers in parallel to make a 4ohm cabinet and run one side of the power amp and have the volume off on the other side

2. Run the 2 8ohm speakers so there are 2 jacks in the cabinet, each connected to 1 side of the amp on the 8ohm output so that nobody or myself mistakenly turns up the volume on the unconnected side of the amp?

I cast my vote for stereo. That's what I do out of my 2:100, into each 2x12 side of my 4x12.
